The keepers of 100 years of farming history, Phil, Suzanne and son Tavis of Halls Family Dairy produce the award-winning Hall’s Suzette. An artisanal, single origin cheese, using the milk of Australia’s only purebred herd of Normande cows. A soft washed rind, made to a traditional recipe inspired by the irresistible Pont L’Eveque, made in Normandy since the 12th century.
A regular feature on The Heritage menus, Chef Gord Kahle says “They’re producing one of the best cheeses in the state. No-one else has been able to make anything like it. They’ve nailed it, the perfect cow, the perfect milk, the perfect cheese.”
More recently, Phil, Suzanne and Tavis have been developing a market for beef from their retired dairy cattle. Ethically raised, antibiotic and growth hormone free, these cows spend their lives happily grazing pastures 1.5 hours south of Perth in Wokalup. The increased age, compared to regular beef, makes for an incredible, mature flavour profile; deep and delicious.
